I’m Nico Hinckeldey, a young Swiss chef who grew up between London and Ibiza. I started cooking professionally at the age of 14 and have been chasing my passion ever since. After finishing university, I began a new chapter in Lisbon, opening my first QSR, a gourmet sandwich deli focused on seasonality, local ingredients, and collaborations with artisanal producers. My goal is to create food that’s honest, flavourful, and connects people with the stories behind it.
